Amritsari Fish Tacos

The holy city of Amritsar is not only known as the home of the beautiful Golden Temple, but it is equality as famous for mouth-watering dhaba-style food. Dhabas are little food shacks that are usually open 24 hours and serve delicious comfort foods. One of the most famous dhaba’s in Amritsar is Makhan da Dhaba, where flaking fresh water fish are lightly battered in chickpea flour and carom seeds and fried to perfection. In our recipe we take this traditional fish and wrap it in tortillas to make for a uniquely bolder version of a Baja fish taco. Enjoy these tacos with the tangy chutney mayo and the crunch of fresh onions. '

  • 2 flaky white fish fillets
  • ¼ cup besan (Bengal gram flour)
  • 2 tablespoons rice flour
  • 3 oz spring salad mix
  • ½ cup onion rings
  • 2 oz mayonnaise
  • 1 lime
  • Tortillas
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon Kashmiri chili powder
  • ½ teaspoon ajwain (carom seeds)
  • 2 oz chutney

Pat the fish fillets dry and place horizontally on a cutting board. Cut each fillet into 6 slices.

Place the fillets in a bowl, add the ginger-garlic paste, the Kashmiri chili powder, and salt. Using your hands, mix well to coat each piece with the aromatics and spice. Wash hands well after.

Whisk the besan, rice flour, ajwain and ¼ cup water to make the batter and set aside. It should be the consistency of a thin pancake batter. Mix the mayonnaise and chutney in a separate bowl and reserve for later.

Heat ½ inch of oil in a wide, deep pan until you see small wisps of smoke. Using a fork or tongs, take a piece of fish dip it in the batter, allow the batter to drain and then gently place in the pan. Continue adding fish until the pan is full but not crowded (you may need to do this in batches).

Shallow fry on each side for 1-2 minutes or until golden brown. Remove carefully and drain on a paper-towel lined plate. While fish fry, wrap tortillas in a paper towel and microwave for a minute to warm up.

Build taco buy spreading a spoon of the chutney mayo at the bottom, then a small handful of the salad green, then 2-3 pieces of fish, and topping it with a 2-3 rings of fresh onion. Squeeze a little lime over and enjoy right away!
